Piri Piri Chicken with Spicy Chips

This meal started off as Nandos Chicken with Spicy chips, but we thought that it was just not enough to pour sauce on chicken, we needed to make the sauce! So that is what we did and it tastes amazing (maybe even more amazing than Nandos Chicken…)

For the Chicken:
6-8 chicken drumsticks
6 fresh red chilies
1 tbsp garlic, blanched and chopped
1 tsp salt flakes
½ tsp oregano
½ tbsp paprika
100ml/3½fl oz olive oil
50ml/1¾fl oz red wine vinegar

For the Spicy Chips:
2 large potatoes
Tsp of paprika
Tsp of cumin
Tsp of chilli powder
Tsp of coriander Seeds
Tbsp of chili oil


Piri Piri Chicken:
To make the piri-piri sauce, preheat the oven to 180C.
Place the chillies on a roasting tray and roast them for 10 minutes.
Cool and roughly chop the chillies.
Place the chillies, garlic, salt, oregano, paprika olive oil and vinegar in a saucepan and simmer for 2-3 minutes.
Allow the mixture to cool, then blend it to a purée.
Marinate the chicken for 1-2 hours (prefably overnight)
Preheat oven to 200C
Place the chicken in the oven
Cook for 30 minutes.

Spicy Chips:
Preheat oven to 200C
Peel and chop the potatoes into chips
Part boil for about 10 minutes (or until tender but not breaking)
Drain the potatoes.
Add a drizzle of oil to the chips and mix in the spices to the chips
Place the chips on an oiled baking tray
Place the chips in the oven
Cook for the 30 minutes
