Salmon with Salsa Verde

One of the more recent meals made. Was jolly nice so here it is

Ingredients
3 spring onions, chopped
Grated zest and juice of 1 and half lemons
25g gherkins, drained and rinsed
25 g capers, drained and rinsed
2 tsp flat leaf parsley, chopped
1 tsp dried chevril
2tsp mint, chopped
1 tsp thyme leaves, chopped
150ml Olive Oil
2 salmon fillets
2 knobs of butter
Salt and black pepper
Baby new potatoes
Seasonal vegetables
Rock salt/ sea salt
Olive Oil

Method:

Salmon:
Preheat the oven to 180C
Pour some olive oil on a baking tray and put in oven
Cut a square of foil out per salmon
Put each salmon in foil and add a knob of butter
Wrap up the salmon in the foil
Cook in the oven for 15-20 minutes

New Potatoes:
Part boil the baby new potatoes until they are soft
Add the potatoes to the baking tray
Sprinkle with salt
Cook in the oven for 30 minutes at 200 Deg C.

Salsa Verde:
Add the top 8 ingredients to a food processor and blitz to a paste
Slowly Pour in the Olive oil and Blitz.

Cook the vegetables
Pour salsa verde over salmon

Serve!
Eat!
