Chorizo in Red Wine

Second Tapas meal. Yum Yum!

Serves : 2
Prep Time: 10 minutes
Cooking Time : 10 minutes

Cooking chorizo
2 garlic cloves crushed
1 shallot
Sprig of thyme
Salt and pepper
Olive oil
2 small-medium glasses of red wine
1 bay leave

Slice up the chorizo
Cook in a pot on a medium heat for a few minutes until oils come out and it has darkened
Add shallots, garlic , sprig of thyme, a bay leaf and stir for a few seconds
Add red wine and bring to the boil
Simmer for 5 minutes
