Chicken Caesar Salad

Classic salad but very tasty. Gotta enjoy the classics. Revamped and made healthier

Serves : 2
Prep Time: 15 minutes
Cooking Time : 15 minutes

Ingredients:
1 garlic clove, finely chopped
4 – 6 tinned anchovies
20g Parmesan cheese
3 tablespoons 0% fat Greek yoghurt
A squeeze of lemon juice
Salt and pepper
2 Chicken breasts
Bacon (optional)
Olive oil
Lettuce

 Method:
Cut the chicken breast into chunks
Heat olive oil in a pan
Cook the chicken for 10 minutes or until cooked.
Wash the marinade off 3 anchovies
Mush up the anchovies using a fork
In a bowl add the anchovies and yoghurt and mix
Grate in some parmesan and mix
Add lemon, taste, season and tweak
Tear up some lettuce into a new bowl
Cut some cucumber up into the bowl
Add any other fruit or veg to the bowl
Add a couple of Anchovies
Add the cooked chicken
Pour the sauce on top

Serve!
Eat!
Enjoy!
