This is a dish we are very proud of since we make the pasta and the sauce ourselves!

300g 00 Flour
250g beef mince meat
Half red onion
1 carrot (chopped)
Stick of celery (chopped)
1 clove of garlic (chopped)
Tin of chopped tomatoes
Glass of red wine
Bouillon powder (one teaspoon, to make one cup of stock)
Two tablespoons of green pesto
1 tablespoon of tomato puree
1 tablespoon of ketchup
1 tablespoon of balsamic vinegar
1 teaspoon of dried chopped basil
Salt and pepper
To make the pasta make a well in the flour
Add 3 eggs to the well and lightly beat
Knead until it is no longer rough feeling
Use a pasta maker on a spaghetti setting to create the spaghetti for the Bolognese
Soften the onions in a pan with some olive oil.
Add the mince meat and brown
Add the garlic and salt and pepper to season.
Add the carrots and the celery and cook for a few minutes.
Add the tomatoes, stock, wine, bayleaf,basil, and tomato puree.
Leave the mixture to simmer until it is reduced to half.
Add the pesto, balsamic vinegar and ketchup (taste to see if any seasoning is needed)
Add the spaghetti to a pan of boiling water.
Further reduce the mixture until it becomes the consistency of bolognese sauce.
