Open Chorizo and Red Pepper Hot Dog

Posh version of the hot dog.

Serves : 2
Prep Time: 15 minutes
Cooking Time : 10 minutes

Ingredients:
1 red pepper
Cooking chorizo
1 small french baguette
Large handful of rocket
tbsp of olive oil

Method:
Heat up a grill until hot and blacken a red pepper
Leave to cool and scrape off the blackened skin.
Remove the seeds from the pepper and slice.
Cut the chorizo in half lengthways and cook under the grill on both sides for a few minutes.
Cut the bread into 2, length ways
Lightly toast the bread under the grill.
Then place the rocket, peppers and chorizo on top of the bread and drizzle with olive oil.

Serve!
Eat!
