Irish Stew

On a cold day, this is a lovely dish


Serves : 2 – 3
Prep Time: 30 minutes
Cooking Time : 2 hours

1 tbsp vegetable oil
Few rashers of  smoked streaky bacon, diced
1 pack of stewing lamb , cut into large chunks
2 medium onions , sliced
2 carrots , diced
3 bay leaves
Small bunch thyme
Handful of pearl barley
850ml lamb stock
2 potatoes , diced

Heat oven to 140C for a fan oven.
Heat the oil in a frying pan.
Sizzle the bacon until crisp.
Cook the lamb until brown.
Remove the meat.
Add the onions, carrots and herbs to the pan.
Cook for about 5 mins until softened.
Return the meat to the pan and add the pearl barley.
Pour over the stock, then bring to a simmer.
Add everything to a casserole dish.
Add the potato on top of the stew cover and cook for about 1½ hrs until the potatoes are soft and the meat is tender.
