Jerk Chicken and Jalapeno Flatbreads

Spicy! This is from the main man Levi Roots!

Serves : 2-3
Prep Time: 20 minutes
Marinade: Overnight
Cooking Time : 30 minutes


Jerk Chicken:
1 tbsp allspice
1 tbsp black peppercorns
1 tbsp  chilli flakes
½ tbsp muscovado sugar
2 tbsp  honey
Handful of flat-leaf parsley
Handful of fresh coriander
2 scotch bonnet chillies
1 garlic clove
Thumb size piece of ginger
2 spring onions,
Olive oil
6 to 8 chicken drumsticks
Olive oil
1 lime

Jalapeno Flatbreads
125g self-raising flour, plus extra for dusting
125g yoghurt
1/4 tsp baking powder
Jar of jalapenos


Jerk Chicken:
Mash  the top 12 ingredients together in a pessle and mortar.
Pour over the chicken and leave over night.
Grill or barbecue the chicken drumsticks for 30 minutes or until cooked.
When chicken is ready, squeeze lime over.

Jalapeno Flatbreads:
In a bowl, mix together the flour, yoghurt, baking powder and a pinch of salt.
Knead the dough on a lightly floured surface.
Divide the dough into 2 pieces.
Roll out the dough.
Scatter over the jalapenos.
Grill or barbecue for 2 to 3 minutes.
