Salmon with Chorizo Salsa

Once again, lovely dish, terrible photo

Serves : 2
Prep Time: 15 minutes
Cooking Time : 30 minutes

2 salmon fillets
Knob of butter
2 tomatoes, diced
Half a cooking chorizo, diced
1 garlic clove, crushed
1 red chilli, finely chopped
1 shallot, finely chopped
1 tbsp Sherry Vinegar
New potatoes
Olive Oil / Chilli oil
Sea Salt

Add a knob of butter to a salmon in a foil parcel.
Cook in the oven for 20 minutes at 200 Deg C.
Par boil new potatoes.
Toss the new potatoes in oil and sea salt.
Oven roast the new potatoes for 30 minutes at 200 Deg C.
Heat olive oil in a pot.
Add the garlic, chillies and shallot and cook for a few minutes.
Brown the chorizo
Add the sherry vinegar and the tomatoes
Cook for 10 minutes.
