Taste as good as the real stuff!
115g caster sugar
3 lemons, zest and juice
Dissolve the sugar in the water over a medium heat.
Bring the mixture up to the boil, then simmer briskly for 3-4 minutes.
Remove from the heat and leave to cool for a minute.
Add the lemon zest and juice to the syrup after a minute.
Add the vodka.
Pour the limoncello into a sterilised bottle.
Leave in a cool, dark place for 24 hours, shaking occasionally.
