Sea bass with tomato and lime salsa

This meal was our first official dinner party main course. This is another meal from Levi Roots which was lovely

Serves : 2
Prep Time: 20 minutes
Cooking Time : 30 minutes

Ingredients:

Sea bass:
2 limes, juice only
2 tbsp chopped fresh coriander leaves
Few sprigs of fresh parsley, finely chopped
Few sprigs fresh thyme, finely chopped
½ tsp ground allspice
1 tsp Worcestershire sauce
1 Scotch bonnet chilli, seeds removed, roughly chopped
2 spring onions, trimmed, finely chopped
1.5 tbsp olive oil
salt and freshly ground black pepper
2 sea bass fillets

Tomato and lime salsa:
1 tbsp vegetable oil
2 large ripe tomatoes, cut into 2cm/¾in cubes
2 spring onions, trimmed, chopped
1 Scotch bonnet chilli, seeds removed, sliced
1 lime, juice only
salt and freshly ground black pepper

Tomato and lime salsa:
1 tbsp vegetable oil
2 large ripe tomatoes, diced
2 spring onions, trimmed, chopped
1 Scotch bonnet chilli, seeds removed, sliced
1 lime, juice only
salt and freshly ground black pepper

Cou Cou:

Pack of  ready-made polenta, slice length ways into two pieces
2 tbsp vegetable oil
Seasoned flour
Few sprigs fresh thyme, finely chopped
30g/1oz butter
Pack of okra, trimmed, cut diagonal strips
1 onion, finely chopped
2 garlic cloves, finely chopped
pinch salt

Method:

Sea Bass:
Blend the top 10 ingredients together.
Marinade the sea bass with the sauce for 15 minutes.
Add some olive oil to the skin side of the sea bass.
Heat up a pan
Put the sea bass skin side down.
Cook until skin is golden and crispy
Turn the heat down, flip the fish over and cook for a couple of minutes.

Cou Cou:
Cover the polenta in the seasoned flour.
Heat oil in a pan.
Fry the polenta on all sides until golden brown.
Heat butter in a seperate pan.
Add the okra, onion, garlic, thyme and the salt and cook until softened.

Tomato and lime salsa:
Heat oil in a pan.
Add the tomatoes, spring onions and Scotch bonnet chilli and cook until softened.
Pour over the lime juice and season, to taste

Serve!
