Banana Bread

Haven’t done a pudding for a quite a while, so here is a yummy one. I first tasted banana bread in Italy 🙂

Serves : 1 – 8
Prep Time: 30 minutes
Cooking Time : 1 hour

140g butter, plus extra for the tin
140g caster sugar
2 eggs
140g self-raising flour
1 tsp baking powder
2 very ripe bananas

Preheat oven to 180 DegC.
To soften the butter, flatten it between two layers of greaseproof paper using a rolling pin.
Cream the sugar and butter.
Add the eggs, flour and baking powder and fold in.
Add the bananas and mix in.
Pour into the baking tin.
Cook for 45 mins to 1 hour in the oven, until the skewer test comes out clean.
