Beef in Black Bean with Egg Fried Rice

Had to go all the way to China town for black beans but it was worth it for this yummy Chinese Classic

Serves : 2
Prep Time: 20 minutes
Cooking Time : 15 minutes

Ingredients:

Beef in Black Bean:
Rump Steak, sliced into strips
Broccoli
Green pepper, sliced into strips
Sesame oil
Oil
Thumbsize of ginger, peeled and finely chopped
3 cloves garlic, finely sliced
1 tbsp  black beans, soaked for 5 minutes in warm water then drained
1 red chilli, deseeded and chopped
1 tbsp shaoxing wine (or dry sherry)
1 tsp soy sauce, and more to taste

Egg Fried Rice:
Cold cooked long grain rice
2 eggs, whisked and seasoned
3 Spring onions
1 tbsp soy sauce

 Method:

Beef in Black Bean:
Heat the oil in a wok.
Add the garlic, chilli and ginger and cook for a minute.
Add the black beans, pepper and broccoli and cook for a minute.
Add the beef and cook until brown on all sides.
Add the  shaoxing wine and soy sauce.
Season to taste by using soy sauce .
Drizzle sesame oil.

Egg Fried Rice:
Heat the oil in a wok.
Add the rice and spring onions and cook for a few minutes.
Add the whisked egg and keep stirring until the egg is cooked and scrambled.
Add the soy sauce.

Serve!
Eat!
