Pistou Soup

Lovely vegitarian Soup

Serves : 3-4
Prep Time: 30 minutes
Cooking Time : 30 minutes

Olive oil
1 onion, diced
3 carlic gloves, crushed to a paste using a mortar and pestle
1 sprig of thyme
2 bay leaves
2 tbsp tomato paste
1 Carrot, diced
1 courgette diced,
50 g green beans, quartered
1/2 can of cannellini beans
1 litre bouillon stock
100g Macaroni
Bunch of basil
3 cloves of garlic

Pound basil, a good glug of olive oil and garlic together in a pestle and mortar for the pistou.
Heat some olive oil in  a pan.
Add the onions and garlic and soften for a few minutes.
Add the thyme, bay leave, tomato paste, carrots and courgettes and cook for 15-20 minutes.
Add all the beans and bouillon.
add the pasta and peas.
Cook for 10 minutes or until pasta is done to your preference.
Remove thyme and bay leaves.
Pour soup in a bowl and add a dollop of pistou.
