Chicken with Prosciutto and Basil Mash

Thought this would be boring but was very yummy!

Serves : 2
Prep Time: 10 minutes
Cooking Time : 30 minutes

2 chicken breasts
2 basil leaves
2 slices proscuitto
Olive oil
2 tbsp madeira
100ml chicken stock
2 Potatoes
Knob of butter
2-3 tbsp Basil, finely chopped

Butterfly the chicken breast.
Lay a basil leaf on top.
Top with a slice of prosciutto.
Secure with a cocktail stick.
Heat oil in a frying pan.
Brown the proscuitto side.
Flip and cook for a few minutes.
Add the  madeira and cook for a minute.
Add the stock and cook for 5 mins.
Boil potatoes until they are softened.
Drain the potatoes.
Add the butter, milk, basil and turn into mash potatoes.
