Slowly cooked and so so so nice. First recipe tried from Leon recipe book.
Serves : 2 – 3
Prep Time: 30 minutes
Cooking Time : 2 hours 30 minutes
1 teaspoon paprika
3 tbsp olive oil
1 tsp dried oregano
3 cloves of garlic, finely chopped
Pack of pork ribs
1 red onion, diced
1 1/2 celery sticks
Tin of chopped tomatoes
500 ml chicken stock
1/2 cinnamon stick
3 bay leaves
1 tbsp sherry vinegar
Salt and pepper
Preheat oven to 240 Deg C.
Add paprika, salt, olive oil, oregano and garlic into a ovenproof dish.
Add the ribs and coat.
Cook uncovered for 20 minutes and occasionally turn over for evening browning.
Reduce temp to 180 Deg C.
Add onion, celery and cook for 30-40 minutes.
Add the tomatoes, chicken stock, cinnamon, bay leaves and seasoning.
Cover with a lid and cook for a hour.
Add the sherry vinegar and pasta and stir.
Cover and cook for 15 minutes.
Stir and cook for another 10 minutes.
