Sticky Ribs with Coleslaw

Manly Meal!

Serves : 3-4
Prep Time: 30 minutes
Cooking Time : 2 hours


Sticky Ribs:
Pork spare ribs
1 tsp black peppercorns
3 bay leaves
small handful flatleaf parsley
1 onion, roughly chopped
1 carrot, cut into chunks
200g  tomato ketchup
3-4 tbsp  chipotle paste
100ml dark soy sauce
175g dark muscovado sugar
4 tbsp teriyaki sauce

200g White Cabbage , core removed and leaves finely sliced
40ml white wine vinegar
1/2 a onion, finely sliced
1 carrot, julienned
Dash of Tobasco sauce
Dash of Worcestershire Sauce
50ml mayonaise
50ml double cream
Salt and Pepper


For the ribs, place the top 6 ingredients in a big pot.
Cover with water, bring to the boil.
Simmer and cook for 1½ hours.
Meanwhile, preheat the oven to 200 Deg C.
For the sauce, put the bottom 5 ingredients into a pot.
Bring to a simmer.
Remove the ribs from the water.
Dip them into the sauce and place onto a roasting tray.
Bake in the oven for 20-30 minutes, basting with more of the sauce every 10 minutes.

Place the cabbage in a bowl with the vinegar.
Cover with cling film.
Allow to stand for 30 minutes.
Drain off excess vinegar.
Add the Worcestershire sauce and Tobasco sauce.
Toss to mix.
Add the mayonnaise and cream.
Toss to mix.
Season and toss
