Halloumi with Olives and chilli wrapped in Red Pepper

Vegetarian! Vegetarian! Vegetarian!

This is exciting as this the first vegetarian recipe on FADHoppers!

Meat is amazing and tastes fantastic but you hear every so often from reports that everyone eats too much meat and people should cut down and eat it once or twice a week. Also people say vegetarian meals are healthy. So for 2013 I thought I’d try some vegetarian meals. One I have tried already this year is roasted butternut squash with pasta in pesto, which is amazing and I will be putting it onto FADHoppers sometime (once perfected). For Christmas I was also bought a vegetarian cookbook to improve my vegetarian cooking. I’m looking forward to trying make some of the recipes such as a vegetarian pasty!

In other news I failed one of my new years resolutions, which was to try and learn a guitar song once a month. I haven’t decided whether to try and complete learning Biffy Clyro or move on to a different song. I haven’t completed any other new year resolutions yet but so far so good with a nice restaurant a month!

Serves: 2
Prep Time: 15 minutes
Cooking Time: 15 minutes

Ingredients:
2 red peppers from a jar
100g Halloumi cheese , sliced in half vertically
1 red chilli , finely chopped
1 tsp oregano
4 black or green olives ,  sliced
1 lemon, zest and juice

Method:
Cut the bottom off the peppers.
Slit the pepper down one side to open them out.
Add a slice of halloumi in the center of each strip.
Add some of the lemon zest and juice, chilli, oregano and olives between them.
Wrap the red pepper around the halloumi.
Secure with cocktail sticks
Barbecue or grill the red peppers on both sides for 5 minutes or until cheese is starting to soften.

Serve!
Eat!
