Lamb and Asparagus Fajitas

Fajitas or Tacos? Who knows for sure! Anyway this combination is an interesting European take on a Mexican classic and it works great. I asked for some Mexican cook books for Christmas as I was really starting to enjoy the cuisine. This recipe is from one of them, although it has been FADHoppered (modified). No luck at making salsa yet so for the time being I’m still eating salsa from a jar!

I haven’t decided what to do about guitar songs yet. I am thinking about ditching Biffy Clyro and going for a classic – ‘Wonderwall’! Every guitarist should surely know how to play ‘Wonderwall’ right?

Also I went for a 4km jog recently. I bought some running trainers in the January sales and decided to jog now and again to try and keep a bit healthy. Jogging is cheap and probably is healthy for you but it isn’t fun. Who really likes jogging? How can people enjoy jogging? I may try to keep at it though to see if I feels any health benefits.

Anyway the recipe is simple and tasty. What more could you want!


Serves: 2
Prep Time: 15 minutes + 30 minutes marinade
Cooking Time: 15 minutes

Diced lamb
Asparagus spears
1/2 lemon
1 tsp cumin
6 tortilla wraps
Crumbled feta cheese
Olive oil
Salt and black pepper

Season the lamb.
Marinade the lamb in the cumin for half an hour.
Heat olive oil in a pan.
Fry the lamb until cooked.
Boil the asparagus for 3-5 minutes, until tender.
Drain the asparagus.
Squeeze lemon juice over the asparagus.
