Venison with Chocolate Pasta

You heard right! Chocolate pasta! This chocolate pasta is from Hotel Chocolat and can be used in either a savoury dish or sweet dish.We decided to go savoury and have it with venison as venison is meant to match well with Chocolate. It surprisingly worked really well!

I booked a session at Recipease recently, which will happen in April. Recipease is Jamie Oliver’s cookery lessons( Yes- he is taking over the world and No – He won’t be teaching (which is probably why its £40 a person and not £1000). They run for a couple of hours where you learn to cook, eat your food and drink a beer (nice idea!) There are 3 locations down south and various different cookery lessons. My girlfriend and I have chose Vietnamese Street Food which should be exciting to cook! Rather looking forward to it!

Serves: 2
Prep time: 15 minutes
Cooking Time: 1 hour 30 minutes

Ingredients:
2 venison steaks, diced
1 onion, diced
1 carrot, diced
1 celery, diced
Few sprigs of rosemary, leaves only finely chopped
Few sprigs of thyme, leaves only
Large glass of red wine
450ml beef stock
1 tbsp tomato puree
20g flour
Salt and pepper
Olive oil
250g chocolate pasta

Method:
Season the flour
Roll the venison around in the flour
Heat olive oil in a big pot.
Brown the venison.
Remove the venison from the pot and keep until later.
Add the onion, carrot and celery to the pot.
Sweat for 10 minutes.
Add the red wine and beef stock
Add the herbs.
Add the tomato puree.
Add the venison.
Bring to the boil.
Simmer for a hour.
Increase the heat to reduce the sauce and thicken it up.
Boil some water in a kettle.
Pour in a pot.
Season the water with salt.
Add the chocolate pasta.
Cook until al dente or to your liking

Serve!
Eat!
