Simple dish, healthy and quick to make! I first made this dish with Thai fish cakes (instead of salmon) but deep frying puts me off because I end up wasting a bottle of oil and it just seems rather unhealthy. With salmon it seems a lot healthier and the two taste awesome together.
I watched The Grudge recently (American version). It wasn’t particularly scary but the girl was creepy in it! Sarah Michelle Gellar doesn’t seem like a great actress… Would I recommend it? Not really. It reminds me of the Ring and the Ring was a lot better.
Have I watched anything else good recently? No – not really. The TV series Black Mirror was good (if you like messed up shows). Apart from that I mainly just watch cooking shows (Sad isn’t it? – but way more interesting than football) I want to get into Breaking Bad!
Not much else to say! So here is the recipe
Prep Time: 10 mminutes
Cooking time: 20 minutes
2 salmon fillets
2 tbsp soy sauce
Thumbsize ginger, grated
1 shallot, finely chopped
1 garlic clove, finely chopped
1 red pepper, sliced
1 yellow pepper, sliced
1 carrot, peeled and thinly sliced
Handful of sugar snap peas,
Small head of broccoli, florets
2 tbsp fish sauce
1 tbsp oyster sauce
1 tbsp rice vinegar
1 tbsp water
1 tsp sugar
2 tbsp olive oil
Preheat the oven to 200 Deg C.
Cut out two squares of foil.
Place the salmon on each foil.
Add 1 tbsp of soy sauce to each and half the ginger.
Wrap the salmon in the foil.
Cook in the oven for 20 minutes.
In a bowl add the fish sauce, oyster sauce, water, sugar, sesame oil
Cook the broccoli in a pot full of boiled water for a few minutes
Heat the olive oil in a wok.
Add the shallot and the garlic and cook for 30 seconds.
Add the peppers and cook for 30 seconds.
Add the green beans and cook for a minute.
Add the broccoli and cook for a minute.
Add the sauce and cook until the sauce has reduced by half
