My hard drive went kaput recently so I had to back up all my photos and important files, because I never have before.

Anyway, a new hard drive means I am back in business and can do FADHopper posts!
The UK is starting to get warmer and we have had some nice sunny days! Recently we went to Southend (Coastal town in Essex with the longest pier) as it was nice and sunny. This adventure will be told in another post.
Spicy Ribs with Baked Potato is a summery dish and this one is delicious! The recipe is a juggling act with the oven temp though!
Prep Time: 15 minutes
Cooking Time: 2 hours
3 tbsp soy sauce
2 tbsp tomato ketchup
2 tbsp runny honey
2 garlic cloves, crushed
1 tsp paprika
½ tsp chilli powder
1 chilli, finely chopped
Grated zest of 1 lemon
Pack of pork ribs, seperated into individual ribs
2 baked potatoes, cleaned with water, dried, slashed a few times.
Baked potato accompaniment such as coleslaw or cheese or chilli…
Salt and black pepper
Chilli olive oil
Preheat oven to 160 Deg C.
Wrap each baked potato in foil.
Place it in the oven for 1 hour.
Whack the oven up to 200 Deg C.
Put the soy sauce, ketchup, honey, garlic, paprika, chilli, chilli powder and lemon zest in a small pot.
Place the pork in a lightly oiled roasting tray, in a single layer .
Bring the glaze to a boil gently, then reduce the heat and simmer for 2 minutes.
Pour the sauce over the ribs.
Cook for 15 minutes.
Lower the temperature to 160 Deg C and cook for a further 45 minutes.
Turn halfway through the cooking and baste regularly with the sauce in the tray.
