I haven’t been very consistent with posts recently varying from lots a week to one a week. I would like to add a bit of structure to my posts and say
Blogs will now posted on Mondays and Thursdays!
This should hopefully give me a kick up the back side to post more blogs!
This may incur the penalty of boring dreary posts but lets hope not!
The only time I won’t be posting on a Monday and Thursday is when I’m on holiday (because I’m not that sad!)
Food, food, glorious food and this is a terrific. It started life as a quesadilla but we preferred the burrito shape but it’s probably not technically a burrito so not sure of its real name!
Names are not important though when the taste is so awesome! Enjoy.
Prep Time: 15 minutes
Cook Time: 30 minutes
1 tbsp olive oil
1 onion, diced
1 yellow pepper, diced
1 tsp ground cumin
1 tsp dried oregano
1 tsp paprika
1 red chilli, finely chopped
2 garlic cloves, crushed
Pack of beef mince
1 tsp salt
½ can of chopped tomatoes
Grated cheddar Cheese
Preheat oven to 200 Deg C.
Heat oil in a pot.
Add onion and peppers to a pot, over a medium – high heat.
Add the cumin, oregano, paprika, chilli and garlic.
Cook for a minute.
Add the beef and salt.
Cook for 5 minutes, until browned.
Add the tomatoes.
Simmer until slightly reduced.
Add a quarter of the mixture to each tortilla.
Sprinkle with as much cheese as you want.
Wrap the tortillas into a burrito shape.
Sprinkle cheese on top.
Cook in the oven for 10 minutes, or until the cheese is melted and looks awesome.
