Chorizo makes everything taste amazing and this burrito is no exception!
prep Time: 15 minutes
Cooking Time: 30 minutes
1 large onion, diced
1 pepper, diced
2 garlic cloves, crushed
1 tsp dried oregano
1 tsp chilli powder
Chorizo, peeled, diced
Can of tomatoes
Can of cannellini beans, drained
Large chunk of cheddar cheese, grated
Salt and pepper
Preheat oven to 200 Deg C.
Heat the oil in a pot, over a medium heat.
Add the onion and pepper to the pot.
Cook for 5 – 8 minutes, until brown.
Add the garlic, oregano, chilli powder and chorizo.
Cook for 1 minute or 2.
Add the can of tomatoes.
Add the beans.
Simmer for 15 minutes, stirring occasionaly.
Taste and season.
Divide the filling between the tortillas.
Sprinkle the cheese over.
Fold in the sides of each tortilla to cover the filling.
Roll to enclose.
Place on a baking tray.
Cover with foil.
Cook in the oven for 10-15 minutes, to warm through and melt the cheese
