Notting Hill Carnival and Steak and Chorizo Pie

I went to Notting Hill Carnival last weekend for my first time with my girlfriend.

We had a few beers, rum cocktail, patty, jerk chicken and some fun.

During the Scottish holiday, we (girlfriend and I) went to a pub and had a delicious steak and chorizo pie. The pie below is a adaptation of their pie and it is awesome!

Serves: 2
Prep Time: 20 minutes
Cooking Time: 2 hours

Ingredients:
Pack of stewing steak, diced
Chorizo, peeled, diced
2 carrots, peeled, diced
1 tbsp thyme, leaves only
Large glass of red wine
250ml beef stock
Onion, peeled and diced
3 bay leaves
Flour
Salt and pepper
1 tbsp olive oil
Puff Pastry
1 egg, mixed

Method:
Season the flour in a bowl.
Add the steak and cover the steak in flower.
Shake off excess flour.
Heat the olive oil in a pot.
Sear the steak all over.
Remove the steak.
Add the onion and carrot and cook for 5 minutes, or until the onion is soft.
Add the chorizo and cook for 3-5 minutes, or until the oils are released.
Add the steak.
Add the wine.
Cook for 5 minutes.
Add the stock.
Bring to the boil.
Cover and simmer for a hour.
Add the pie filling to a pie dish.
Preheat oven to 200 Deg C.
Add puff pastry to the top
Slit a few holes in the puff pastry.
Egg wash the pastry.
Cook in the oven for 20 minutes.

Serve!
Eat!
