Prep Time: 10 minutes
Cooking Time: 30 minutes
baby new potatoes, halved
2 salmon fillets
Handful of black Kalamatas, pitted and halved
Handful of sundried tomato, chopped
1 garlic clove, crushed
1⁄2 lemon, juice
1 tbsp olive oil
Handful of green beans
Preheat oven to 180 Deg C.
Wrap each salmon fillet in foil, with a knob of butter.
Cook in the oven for 20 minutes.
Boil and simmer the potatoes for 20-30 minutes, or until cooked.
Add the beans for the final couple of mins.
Drain the veg, then tip into a large bowl.
Add the olives and tomatoes to the potatoes and beans
Gently flake in chunks of the cooked salmon.
Whisk together the garlic, lemon and oil with some seasoning, and loosen with a few drops of water.
Pour the dressing over the salad, toss well, and serve.
