Commitments and Chicken with lentils and butternut squash

My girlfriend, her mum and I went to watch the commitments as a birthday present to my girlfriends mum.

I’d never watched the film. I enjoyed the musical. It was fun. If people don’t know, the basis is a group of Irish people coming together to make a soul band and they have difficulties. They  played great tracks and now I’m really enjoying motown music.

Serves: 2
Prep Time: 30 minutes

Cooking Time: 30 minutes

1 butternut squash, peeled, diced
Olive oil
salt and pepper
50ml vegetable stock
2 chicken breasts
2 -3 rashers of pancetta, diced
1 shallot, finely chopped
150ml/5½fl oz brown chicken stock
1 tbsp red wine vinegar
4 tbsp cooked lentils

Preheat the oven to 190 Deg C.
Put the  butternut squash in a roasting tin with  a little olive oil and season with salt and pepper.
Roast for 20 minutes, or until very soft.
Transfer to a blender and add half the vegetable stock and two tablespoons of olive oil. Blend to a smooth purée, adding more stock if necessary. Taste and add more salt and pepper as required.
Heat olive oil in a frying pan.
Sear the chicken
Roast the chicken in the oven for 15 minutes, or until cooked.
Use the same pan to fry the pancetta until crisp then set them aside.
Fry the shallots until softened.
Add the chicken stock and cook until reduced in volume to a thick sauce.
Put the pancetta back into the pan and add the vinegar and cooked lentils.
