Last post, first post and a way to use up leftover pork.

This will be the last post about 2014.

For the Christmas period my girlfriend and I did lots of fun things.

We went to a play called Neville’s Island. It starred

The play was funny and fantastic.

We also went to Winter Wonderland where I won a cuddly toy on a game for my girlfriend and had a couple of beers at the Bavarian Beer Hall

We also completed two Christmas tree mazes! Yes – two Christmas tree mazes in London (one on the Southbank and one in Vauxhall).

For New Years we went to a club that started with a comedy night (terrible terrible comedians) and ended with a night club (bad music and expensive drinks)

Now time for the first post related to 2015.

My girlfriend and I saw queen in 2015! (The band with Adam Lambert)

The only bad point was that there was no support band. The band themselves were amazing. They kicked off with One Vision (my favourite song and they did say ‘gimme gimme fried chicken’ – best lyric). They sang all the classic hits and Adam Lambert didn’t take over, gave respect to Freddie and let Taylor and May also take the spotlight. The songs were great and I had a lot of fun. They even got Freddie on the screen which was quite emotional.

Now onto the recipe!

Stuffed peppers with left over pork – delicious!

Serves: 2
Prep Time: 15 minutes
Cooking time: 1 hour

Leftover pork, shredded
2 peppers, halved and deseeded
Handful of parsley, finely chopped
2 tbsp red wine vinegar
½ onion, finely chopped
1 tbsp tomato ketchup,
2 tomatoes, finely chopped
1 tsp paprika
Olive oil
Salt and pepper

Preheat oven to 180 Deg C.
Rub the peppers in salt and pepper and oil
cook in the oven for 20 minutes.
Mix the rest of the ingredients in a bowl.
Add the filling to the peppers.
Cook for another 25-30 minutes.
