恭喜发财 – Happy Chinese New Year!
Today marks the start of the year of the goat (or sheep or ram). Therefore what better way to start this New Year than with a Chinese inspired recipe!
Honey and Soy Chicken with Egg Fried Rice
Prep Time: 10 mins
Cook Time: 30 mins
4 tsp clear honey
4 tsp soy sauce
Skinless chicken thighs
Cold cooked long grain rice
1 egg, whisked and seasoned
2 Spring onions chopped
1 tbsp soy sauce
Sesame Oil (to taste)
In a bowl, mix together the honey and soy sauce.
Add the chicken thighs and mix until completely coated in the marinade.
Place the coated chicken thighs into a cold, deep, heavy-based saucepan.
Place the pan onto a medium heat and cook until the chicken is cooked through and the honey and soy coating has thickened to a glossy glaze.
Meanwhile, Heat the oil in a wok.
Add the rice and spring onions and cook for a few minutes.
Add the whisked egg and keep stirring until the egg is cooked and scrambled.
Add the soy sauce.
Cook for a minute.
Take off the heat and add a drizzle of sesame oil, to taste.
