Long Time, No Speak
I will try and change this!
I am going to try and post three times a week! Two blogs like this and a third quick one which will only have a recipe on 🙂 Also I will include my many many failed recipes!
Prep Time: 15 minutes
Cooking Time: 45 minutes
2 chicken breasts, diced
6 fresh red chilies
1 tbsp garlic, blanched and chopped
1 tsp salt flakes
½ tsp oregano
½ tbsp paprika
100ml/3½fl oz olive oil
50ml/1¾fl oz red wine vinegar
1 onion, diced
1 red pepper, seeds removed, diced
Rice – cook to instructions
To make the piri-piri sauce, preheat the oven to 180C.
Place the chillies on a roasting tray and roast them for 10 minutes.
Cool and roughly chop the chillies.
Place the chillies, garlic, salt, oregano, paprika olive oil and vinegar in a saucepan and simmer for 2-3 minutes.
Allow the mixture to cool, then blend it to a purée.
Preheat oven to 180 Deg C.
Add the chicken , onion and pepper to a roasting tray.
Pour over the marinade
Cook for 45 minutes, or until cooked
