Handful cherry tomatoes, quartered
1 handful of black and green olives, de-seeded and chopped
3 tbsp extra virgin olive oil , plus extra for bread
1 tbsp balsamic vinegar
French baguette , sliced diagonally
Few basil leaves, torn up
Preheat the oven to 180 Deg C.
Pour a little olive oil over the bread.
Add to the oven for a few minutes, to crisp up
Mix the tomatoes, olives, 3 tbsp of oil, vinegar and basil in a bowl.
Pour the mixture over the bread.
