Election Day – Go Vote! and Lime Drizzle Cake

Today in the UK is election day!

If you live in Britain and are eligible to vote – Go Vote! I will tonight.

I won’t say any political views apart from I’m not very fond of UKIP.

Anyway, after you’ve voted, go home and make this awesome cake 🙂

007 (Custom)Serves: 2-8
Prep Time: 30 minutes
Cooking Time – 45 minutes

Ingredients:

Cake:
125g butter, diced (plus extra for buttering the tin)
225g self raising flour
pinch of salt
125g caster sugar
2 large eggs, beaten
Zest and juice of 3 unwaxed limes

Drizzle:
Juice of a lime
100g caster sugar

Method:

Cake:
Preheat oven to 180 Deg C.
Mix flour and salt in a bowl.
Rub the butter with the flour until it resembles breadcrumbs.
Add the lume zest, juice and eggs
Mix together.
Pour the cake in the tin.
Bake for 45-55 minutes, or until a skewer comes out clean.
Leave to cool for 10 minutes.

Drizzle:
Mix the lime juice and the sugar in a bowl.
When the cake is cool, prick the cake all over with a fork.
Pour the drizzle all over the cake

Serve!
