Burritos and Mexican Red Rice

I work in Central London and in a 20 minute proximity, there must be dozens of burrito takeaway places, which are all very similar but subtely different. For example, they may have different rice – red rice, white rice with corriander etc, they may offer jalapenos or not, may offer different sizes etc.

I love the pork, I like the selections (jalapenos and red rice). My only little  criticisms are sometimes they give you too much rice and sometimes its not hot by the time I get back to the desk

Sticking on the theme of Mexican, what do you find in a Burrito?
Yes the Meat
Yes the beans
Yes the salsa but your missing the one I’m trying to talk about – red rice!

Below is a recipe for red rice which is delicous

061 (Custom)

Serves: 2-3
Prep Time: 10 minutes
Cooking Time: 30 minutes


1 tbsp olive oil
1 onion, finely chopped
2 tsp cumin powder
1 tsp dried oregano
1/2 tsp chilli powder
1 tsp salt
1 tsp chilli flakes
2 tbsp tomato puree

Heat the olive oil in a pot.
Sweat the onions for 5 minutes.
Add the rice, cumin, chilli, oregano, salt, chilli flakes.
Cook for 2-3 minutes.
Add 500ml cold water and tomato puree.
Bring to the boil.
Simmer and cover for 20 minutes, or until water has been absorbed (add more water if required)
