2 chicken breasts, diced
1 tbsp corn flour
1 garlic clove, crushed
2 fresh chillies, slit down the middle
1 tbsp of Shaohsing rice wine or dry sherry
2-3 spring rolls, diced
Salt and Black Pepper
1 tbsp yellow bean sauce
1 tbsp light soy sauce
1 tbsp tomato ketchup
1 tbsp chilli sauce
1 tsp honey
1 tsp dark soy sauce
Coat the chicken in cornflour and season>
Heat up work over a high heat with oil.
Add the garlic and chillies and fry for a few seconds.
Add the chicken and stir-fry for 2 minutes.
Add the Shasohshing rice wine and cook for another 2 minutes.
Add the bottom 6 ingredients.
Bring to the boil.
Cook for 2 minutes or until sauce has reduced.
Add spring onions and cook for a minute
