Seafood Risotto

Tried this dish in the restaurant Strada, loved it and recreated it. Just as delicious as the restaurants version!


Serves: 2
Prep Time: 10 Minutes
Cooking Time: 35 Minutes
Difficulty: Easy


  • Pack of cooked seafood including prawns, squid and mussels (Ours was from Sainsburys)
  • 150g risotto rice
  • 1 onion, diced
  • 2 rashers of pancetta, diced
  • 1 carrot, diced
  • 1 red pepper, diced
  • 500ml of bouillon
  • White Wine, 1 small glass
  • Olive Oil
  • 25g Parmesan, grated


-Heat the olive oil in a pot
-Add the onions and sweat for 5 minutes
-Add the carrot and cook for a few minutes
-Add the pepper and cook for a minute
-Add the risotto rice and cook for a minute
-Add the glass of wine and reduce for a minute.
-Slowly add the bouillon, a ladel at a time, and stir until it has been absorbed. Repeat, -until the risotto is cooked and tastes lovely. You may need to add some extra water if it -dries up too quickly
-When the risotto is nearly cooked, add the seafood and heat through for a minute
Add parmesan until the risotto has a creamy consistency.
