Flaky pastry pesto chicken with Madeira jus

This flaky pastry pesto chicken is so simple and delicious!

Chicken pesto

Serves: 2
Prep Time: 15 Minutes
Cooking Time: 30 minutes
Difficulty: Easy.


Flaky Pesto Chicken:

  • Sheet of ready rolled puff pastry (cold)
  • 2 skinless chicken breasts
  • 2 heaped teaspoons green pesto

Madeira Jus:

  • 2 tbsp Madeira
  • 250ml chicken stock
  • Knob of butter
  • 1 shallot, finely diced
  • Few sprigs of thyme
  • Few sprigs of rosemary
  • Salt and pepper

Mash potato (to serve)


Flaky Pesto Chicken:

– Preheat the oven to 220ºC.
– Unroll the pastry and cut into 6 equal strips.
-Place the chicken breasts in a roasting tray and season with sea salt and black peppers
-Spread over the pesto, then lay 6 overlapping strips of pastry over each breast, tucking them under at the edges.
-Brush with a little olive oil.
-Cook for 20 minutes, or until the pastry is golden and the chicken is cooked through.

Madeira Jus:

-Heat a knob of butter in a pan.
-Add the shallots and sweat for a few minutes.
-Add the rosemary and thyme.
-Add the Madeira and reduce by three quarters.
-Add the stock and reduce by half.
-Sieve the jus to remove the shallot and herbs.

Serve with mash potato.
