Pistachio, Lamb and Mint Meatballs

Before we get onto the recipe, I have some news.

Now on to the recipe!

Lamb and mint is a tried and tested combination but this threesome is so much better.

Serves: 2
Prep Time: 10 Minutes
Cooking Time: 30 minutes
Difficulty: Easy.

Ingredients:

  • 250g lamb mince
  • 1/2 small bunch of mint, finely chopped
  • 30g pistachios, roughly chopped
  • 1 lemon, zest of
  • Olive oil
  • Salt and pepper

Method:

-Mix the lamb, mint and pistachios in a bowl.
-Season generously with salt and pepper and add the zest of 1 lemon.
-Shape the mixture into 8 meatballs.
-Heat 1 tbsp olive oil in a frying pan.
– Fry the meatballs, turning them occasionally so they become evenly browned for 8 – 10 minutes, or until fully cooked.
– Serve with hummus.
